Ingredients
- 1/4 c. flour
- 14 1/2 oz. can stewed tomatoes
- 1 envelope onion soup mix
- 3 to 3 1/2 lb. boneless beef roast
- 4 medium potatoes, quartered
- 4 medium carrots in 2-inch pieces
- 1/4 tsp. pepper
Directions

1Combine flour, tomatoes, soup mix and pepper. Mix well and put in bottom of roasting pan with lid.

2Place roast in pan and turn to coat all sides.

3Place vegetables around roast.

4Cover and bake at 325° until tender, 1 1/2 to 2 1/4 hours.

5Let stand 5 minutes before serving.

6Makes 6 to 8 servings.

7If you do not have a roasting pan with a lid, you can use a 13 x 9 x 2-inch baking dish with an oven bag.

8Before cooking, poke a few holes in top of bag with steak knife.
