Ingredients

  • 1/4 c. flour
  • 14 1/2 oz. can stewed tomatoes
  • 1 envelope onion soup mix
  • 3 to 3 1/2 lb. boneless beef roast
  • 4 medium potatoes, quartered
  • 4 medium carrots in 2-inch pieces
  • 1/4 tsp. pepper

Directions

    Combine flour, tomatoes, soup mix and pepper. Mix well and put in bottom of roasting pan with lid.

    Place roast in pan and turn to coat all sides.

    Place vegetables around roast.

    Cover and bake at 325° until tender, 1 1/2 to 2 1/4 hours.

    Let stand 5 minutes before serving.

    Makes 6 to 8 servings.

    If you do not have a roasting pan with a lid, you can use a 13 x 9 x 2-inch baking dish with an oven bag.

    Before cooking, poke a few holes in top of bag with steak knife.
