  • 4 whole Egg Whites
  • 1-1/2 cup Caster Sugar
  • 1 teaspoon White Vinegar
  • 1 teaspoon Cornflour
  • 4 Tablespoons Boiling Water
  • 1/2 teaspoons Vanilla Essence

Directions

    1. Preheat oven to 180 C.

    2. Line and grease a large baking tray.

    3. Beat all ingredients for 10 minutes on high.

    4. Scoop mixture onto the prepared tray. Spread to an approximately 25cm circle.

    5. Bake for 10 minutes at 180 C.

    6. Turn oven down to 120 C for another 40 minutes.

    7. Let cool slowly then cover in whipped cream and fruit. My favourite is blueberries, raspberries and banana drizzled with passionfruit.
