  • 4 large egg whites
  • 8 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup cream thickened, whipped, to serve
  • passionfruit pulp and fresh fruit to serve

Directions

    Preheat oven to 200c. Line baking tray with silicone mat or baking paper.

    Beat egg whites in the bowl of an electric mixer until soft peaks form. Gradually add sugar, 1 tbsp at a time, beating until thick and glossy.

    Add vanilla extract, followed by the vinegar.

    Spoon meringue onto tray. Level top and pattern sides as desired.

    Place into oven, reduce temperature to 120c, and bake for 1 hour.

    Turn off and allow to cool completely in oven with door closed.

    Before serving, decorate with shipped cream, fresh fruit and passionfruit pulp.
