- 30 c. peas, drained
- 3 3/4 c. diced celery
- 2 1/2 doz. eggs, boiled and diced
- 4 jars pimentos, drained and diced or 3 3/4 c. red bell peppers, diced
- 2 medium size sweet onions, diced (Vidalia)
Directions

1Place all ingredients into very large bowl and toss with a vinegar and oil based salad dressing.

2Chill before serving. Make 75 servings (1/2-cup per serving).
