Pea Soup

- 1 lb. (2 c.) dry whole green peas (available at Keaau Natural Foods)
- 2 ham hocks
- 1 large cooking onion
Directions

1Wash peas well.

2Soak peas overnight in water to cover and then drain.

3Put peas in soup kettle with 2 1/2 quarts of water, the cut up ham hocks and the sliced onion.

4Add freshly ground black pepper to taste.

5Bring to a boil, then reduce heat so soup just simmers and cook for 2 hours.

6I serve this with dark rye bread and butter.
