  • 5 cups peaches, chopped and peeled (about 1 3/4 pounds)
  • 1 12 cups finely chopped red onions
  • 12 cup packed brown sugar
  • 12 cup white wine vinegar
  • 3 tablespoons fresh ginger
  • 12 teaspoon salt
  • 1 jalapeno pepper, minced seeded
  • 12 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice

    Combine first 6 ingredients in a saucepan; bring to a boil.

    Cover, reduce heat, and simmer 45 minutes.

    Stir in jalapeno.

    Remove from heat; stir in cilantro and juice.
