Peach Clafouti

  • 2 Tbsp. sugar
  • 3 c. sliced peeled peaches
  • 1 c. each: milk and light cream
  • 3 eggs
  • 1/4 c. flour
  • pinch of salt
  • 3 Tbsp. sugar
  • 1 tsp. vanilla
  • sifted confectioners sugar or vanilla sugar

Directions

    Sprinkle a well buttered 1 1/2-quart shallow oval baking dish with 2 tablespoons sugar.

    Distribute peaches over the sugar.

    In a blender blend milk, cream, eggs, flour and a pinch of salt.

    Add 3 tablespoons sugar and 1 teaspoon vanilla.

    Blend the mixture for a few seconds and pour it over the peaches.

    Bake the Clafouti in a preheated 375° oven for 45 to 50 minutes or until it is well puffed and golden brown.

    Sprinkle the Clafouti with sifted confectioners sugar or vanilla sugar.

    Serve it barely warm.
