  • 130 grams Rice flour
  • 3 large Eggs
  • 100 grams Sugar
  • 120 grams Butter
  • 2/3 tsp Baking powder
  • 1 (as needed)) (Vanilla extract

Directions

    Beat the eggs in a bowl, add the sugar all in one go, and whip.

    Whip until the mixture forms a thick ribbon when the whisk is lifted.

    Spread the rice flour and baking powder in the bowl, and fold in with a wooden spoon.

    Add the butter in 3 - 4 batches by pouring on the wooden spoon, and mix quickly.

    Then add vanilla extract (optional).

    Pour into the cupcake cups and bake for about 25 minutes at 170C (your oven may vary, so check while baking.)
