- 130 grams Rice flour
- 3 large Eggs
- 100 grams Sugar
- 120 grams Butter
- 2/3 tsp Baking powder
- 1 (as needed)) (Vanilla extract
Directions

1Beat the eggs in a bowl, add the sugar all in one go, and whip.

2Whip until the mixture forms a thick ribbon when the whisk is lifted.

3Spread the rice flour and baking powder in the bowl, and fold in with a wooden spoon.

4Add the butter in 3 - 4 batches by pouring on the wooden spoon, and mix quickly.

5Then add vanilla extract (optional).

6Pour into the cupcake cups and bake for about 25 minutes at 170C (your oven may vary, so check while baking.)
