Peach Cream

Ingredients

  • 1 Tbsp. unflavored gelatin
  • 1 1/2 c. ripe peaches, peeled, cubed and sweetened or 16 oz. pkg. frozen peaches
  • 3/4 c. liquid (add water to peach juice as needed)
  • 2 Tbsp. lemon juice
  • 1/4 c. sugar
  • 1/8 tsp. almond extract
  • 2 c. whipped topping
  • 2 tsp. chopped lemon verbena or lemon balm or lemon mint

Directions

    Soften gelatin in liquid until dissolved.

    Mix in lemon juice, peaches, sugar, extract and herbs.

    Chill until thick but not set. Fold in whipped topping and pour into a one quart mold or six individual molds.

    Chill until set.
