Peach Granita

- 3 cups water
- 1 cup, plus 2 1/2 tbsp granulated sugar
- 4 None peaches, peeled, pitted, chopped
- None None Peach slices, to serve
- None None Mint leaves, to serve
Directions

1Combine the water and sugar in medium saucepan. Stir over low heat until the sugar dissolves then bring to a boil. Reduce the heat and simmer, without stirring, for 10 mins. Set aside and cool to room temperature.

2Place chopped peaches and sugar syrup in a food processor or blender. Process until smooth. Strain mixture into a bowl. Cover and freeze for 3 hours, or until the mixture is just set.

3Using a fork, break up the ice crystals. Freeze for a further 30 mins, until firm. Spoon mixture into serving bowls. Top with peach slices and mint leaves.
