Peach Mint Salsa

  • 2 cups chopped peeled peaches
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped sweet green pepper
  • 1 tablespoon finely chopped jalapeno pepper
  • 2 tablespoons liquid honey
  • 1/4 teaspoon pickling salt
  • lime, juice and zest of
  • 2 tablespoons finely chopped of fresh mint

Directions

    Combine peaches, onion, peppers, honey, salt and lime in saucepan. Bring to a boil and simmer, uncovered for 5 minutes, stirring occasionally.

    Stir in mint and cook for 1 minute.

    Remove from heat and ladle into jars. Process for 20 minutes in boiling water bath.
