  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. sugar
  • 1/2 c. shortening
  • 1 egg yolk
  • 4 Tbsp. ice water
  • about 6 large peaches, cut in eighths (skin on)
  • 1/2 to 2/3 c. sugar
  • 1/8 tsp. cinnamon
  • 1/2 c. sour cream
  • 2 Tbsp. flour

    Preheat oven to 425°.

    Prepare sweet pastry by sifting dry ingredients (flour, baking powder, salt and sugar) together.

    Cut in shortening.

    Add beaten egg yolk, then ice water.

    Roll out 1/8 inch thick.

    Place in a large, 10-inch, deep pie pan.
