  • 1 12 cups sugar
  • 12 cup shortening
  • 2 eggs
  • 2 13 cups peaches, pureed
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 14 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup pecans, finely chopped

    Preheat oven to 325 degrees F.

    In a large bowl, cream together sugar and shortening; add eggs and mix well.

    Stir in peach puree and dry ingredients; add vanilla and pecans and mix well.

    Pour dough into 2 (9x5) well greased and floured loaf pans.
