- 1 c. sugar
- 1/2 c. light corn syrup
- 1/4 c. water
- 1/4 tsp. salt
- 1 c. shelled roasted peanuts
- 2 Tbsp. oleo
- 1 tsp. soda
Directions

1Butter large cookie sheet generously.

2In glass measure, place sugar.

3Add corn syrup, water and salt; stir until well blended. With candy thermometer in place, microwave mixture on High power (100%) for 12 to 15 minutes, without stirring, until temperature reaches 300° (hard crack stage), just until caramel begins to turn light golden.

4Watch closely; mixture burns easily.

5To mixture, add peanuts, oleo and soda; stir well until peanuts are evenly coated.

6Pour immediately onto prepared cookie sheet.

7Spread to a 14 x 12-inch rectangle.

8Let cool until firm.

9With hand, break cold brittle into small pieces.

10Store in airtight container.
