Ingredients

  • 2 c. sugar
  • 1 c. light corn syrup
  • 1 c. water
  • 2 c. unroasted peanuts, chopped
  • 1/4 tsp. salt
  • 1 tsp. butter
  • 1/4 tsp. baking soda

Directions

    Combine sugar, corn syrup and water in 12-inch heavy skillet. Cook slowly over medium heat.

    Stir constantly until sugar is dissolved.

    Continue cooking until mixture reaches soft ball stage (236°) on candy thermometer.

    Add peanuts and salt.

    Cook to just beyond soft crack stage (290° to 300°).

    Add butter and soda, stirring to blend (will foam).

    Pour into 2 large buttered baking sheets.

    While warm, but still firm, turn it over and pull edges to stretch the brittle to make it thinner.

    When cold break into pieces.

    Makes about 2 1/4 pounds.
