Ingredients
- 2 c. sugar
- 1 c. light corn syrup
- 1 c. water
- 2 c. unroasted peanuts, chopped
- 1/4 tsp. salt
- 1 tsp. butter
- 1/4 tsp. baking soda
Directions

1Combine sugar, corn syrup and water in 12-inch heavy skillet. Cook slowly over medium heat.

2Stir constantly until sugar is dissolved.

3Continue cooking until mixture reaches soft ball stage (236°) on candy thermometer.

4Add peanuts and salt.

5Cook to just beyond soft crack stage (290° to 300°).

6Add butter and soda, stirring to blend (will foam).

7Pour into 2 large buttered baking sheets.

8While warm, but still firm, turn it over and pull edges to stretch the brittle to make it thinner.

9When cold break into pieces.

10Makes about 2 1/4 pounds.
