- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 1/2 cups blanched or unblanched raw peanuts
- Vegetable oil for baking sheet
Directions

1Combine the sugar, corn syrup and 1/2 cup water in an 2-quart glass measure.

2Cook, uncovered, at 100% for 3 minutes.

3Remove from the oven and stir thoroughly.

4Add the peanuts; stir again.

5Cover tightly with microwave plastic wrap.

6Cook at 100% for 15 minutes.

7Lightly coat a spatula and a large baking sheet or a 16 x 12-inch marble slab with vegetable oil.

8Remove the syrup from the oven.

9Pierce the plastic to release the steam and uncover carefully.

10Pour the mixture onto the oiled surface.

11With the oiled spatula, spread the peanuts to distribute them evenly through the cooling syrup.

12Let cool and harden.

13When the brittle is cool, break into chunks with a wooden mallet or rolling pin.

14Store in an airtight container.
