Peanut Butter Bars

  • 1 (18 oz.) jar peanut butter (room temperature)
  • 3/4 c. butter or margarine, softened
  • 1 (1 lb.) pkg. powdered sugar
  • 1 (1 lb.) box graham crackers, crushed coarsely (with a rolling pin so they are not too fine)
  • 1 (12 oz.) pkg. semi-sweet chocolate pieces

    Using an electric mixer, cream the peanut butter and butter until very soft and smooth.

    Beat in powdered sugar until smooth, then beat in half of the graham cracker crumbs.

    Beat until well blended and moist.

    Mix in remaining crumbs with hands.

    Spread mixture in a 13 x 9-inch baking pan, patting evenly.

    Melt chocolate and pour over cracker mixture.

    While chocolate is still soft, mark off desired size squares or bars and refrigerate 3 to 4 hours or overnight.
