Peanut Butter Bread

Ingredients
- 1/2 c. Skippy creamy or chunky-style peanut butter
- 1/4 c. butter or margarine
- 2 c. sifted flour
- 1 tsp. salt
- 2 1/2 tsp. baking powder
- 1/2 c. firmly packed light brown sugar
- 2 tsp. grated lemon rind
- 1 egg, slightly beaten
- 1 c. milk
Directions

1Grease one (8 x 4 1/2 x 2 1/2-inch) loaf pan.

2Mix peanut butter and margarine until light and fluffy.

3Sift together flour, baking powder and salt; mix with sugar.

4Add to peanut butter mixture; work in with spoon or fork until fine crumbs form.

5Add lemon rind.

6Mix eggs and milk; add to flour mixture and stir until moistened.

7Turn into prepared pan.

8Bake at 350° for about 60 minutes, or until tester comes out clean.

9Cool in the pan for 10 minutes.

10Remove from pan and cool completely on wire rack.
