Peanut Butter Crisps

  • 1 c. butter or margarine
  • 1 c. creamy or chunky-style peanut butter
  • 1 c. firmly packed brown sugar
  • 1/2 c. granulated sugar
  • 1/4 tsp. salt (optional)
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 c. Quaker oats (quick or old fashioned), uncooked
  • 1 c. all-purpose flour
  • 2 tsp. soda

Directions

    Heat oven to 350°.

    In a large bowl, beat together butter, peanut butter and sugars.

    Blend in eggs and vanilla.

    In medium bowl, combine oats, flour, soda and salt. Add to sugar mixture, mixing well. Shape dough to form 1-inch balls.

    Place on ungreased cookie sheet. Flatten with fork dipped in sugar to form crisscross pattern. Bake about 10 minutes or until edges are golden brown. Cool 1 minute on cookie sheet.

    Remove to wire cooling rack. Makes about 7 dozen cookies.
