Peanut Butter Fudge

  • 2 c. sugar
  • 1/4 c. light corn syrup
  • 1/2 c. milk
  • 2 Tbsp. butter or margarine
  • 1 tsp. vanilla
  • 1 c. peanut butter

    Combine sugar, syrup, milk and salt in saucepan.

    Bring to boil.

    Cover and let boil for one minute to allow steam to wash down crystals that cling to sides of pan.

    Uncover pan and cook, using candy thermometer to 236° or soft ball stage.

    Remove from heat and add butter.

    Cool to lukewarm.

    Add vanilla and peanut butter and beat until candy begins to thicken and lose its high gloss.

    Turn into 8 x 8 x 2-inch pan (buttered) and cut.
