Peanut-Crunch Apple Pie

  • 1 unbaked 9-inch pie shell
  • 1/4 tsp. salt
  • 3/4 c. sugar
  • 2 Tbsp. flour
  • 1/2 tsp. vanilla
  • 2 tsp. lemon juice
  • 5 1/2 c. thin sliced apples
  • 3 Tbsp. melted butter
  • 3 Tbsp. cold crunchy peanut butter
  • 1/4 c. sugar
  • 1/2 c. crushed corn flakes
  • 1/8 tsp. salt

Directions

    Combine 1/4 teaspoon salt, 3/4 cup sugar, flour, vanilla and lemon juice. Toss with apples. Spoon into pie shell.

    Drizzle on butter.

    Blend chilled peanut butter, 1/4 cup sugar, corn flakes and 1/8 teaspoon salt with pastry blender. Sprinkle over apple layer. Bake in moderate oven at 350° for 50 to 60 minutes.
