Peanut Soup

Ingredients

  • 2 c. raw skinned peanuts
  • 2 liters chicken broth seasoned with salt, cumin and garlic
  • 1 large onion, chopped
  • 4 large potatoes, cut up (raw)
  • 4 carrots, chopped
  • 1/4 c. rice, uncooked
  • 1 c. pear (fresh or frozen)
  • parsley

Directions

    Grind the peanuts in a blender.

    With a little oil, saute the peanuts in a skillet, but not until brown.

    Put the peanuts, broth, onion, potatoes and carrots in a large pot.

    Boil for 30 minutes. Add rice and peas and cook for 15 minutes more.

    Serve hot with crushed parsley and French fried potatoes on top.

    Serves 8.
