- 20 ripe pears
- 4 c. sugar
- 1 tsp. grated orange rind
- 1/3 c. orange juice
- 1/2 tsp. ground nutmeg
Directions

1Quarter and core pears; place in large pan.

2Add enough water to prevent sticking.

3Cook until soft.

4Press through sieve of food mill.

5Measure pulp.

6Combine 2 quarts pulp with remaining ingredients.

7Cook 15 minutes or until thick, stirring.

8Put in hot jar.

9Process in hot water bath 180° for 10 minutes.

10Cool. Test for seal.
