Ingredients
- 3 medium pears, peeled, cored and chopped, or 1 (29 oz.) can drained and chopped pears
- 3 eggs
- 1 1/4 c. milk
- 1/2 c. all-purpose flour
- 1/3 c. sugar
- 2 tsp. vanilla
- 1/4 tsp. rum extract
- 1/8 tsp. salt
- 1/8 tsp. ground nutmeg
Directions

1If using canned pears, place on paper towels to drain thoroughly.

2In small mixer bowl, beat eggs with electric mixer until foamy.

3Add milk, flour, sugar, vanilla, rum extract, salt and nutmeg.

4Beat at low speed until smooth.

5Spread pears in greased 10-quiche dish or pie pan.

6Pour batter over pears.

7Bake at 350° for 50 to 60 minutes or until a knife inserted off center comes out clean.

8Let stand 15 minutes.

9Garnish with whipped cream and poached pears is optional and not included in nutritional analysis.
