- 4 ripe pears (can substitute peaches)
- 1/4 c. sugar
- 1/2 lb. puff pastry dough
- 1 egg yolk and 2 Tbsp. water (for egg wash)
- ground black pepper
- creme fraiche (garnish)
Directions

1Roll out the dough to 1/8-inch thickness; cut out four 6-inch circles.

2Brush the edges with egg wash.

3Slice the pears very thin; add sugar and 2 or 3 turns from the peppermill.

4Toss the mixture in a bowl.

5Divide the pear mixture in equal amounts and place in center of each dough circle.

6Fold the top over the bottom; press the edge and seal.

7Brush egg wash over the turnovers and bake at 425° for 20 minutes.

8Serve warm with creme fraiche on the side.
