- 3 Tbsp. corn oil
- 2 medium onions, sliced
- 2 cans peas with pea juice
- 8 eggs
- bunch of parsley
Directions

1Put oil, onions and parsley in frypan.

2Cook until onions become soft (do not overcook onions).

3Spread onions on bottom of frypan.

4Spread peas over onions, saving juice.

5After peas are added, make 4 wells.

6Put two eggs in each well.

7Add pea juice (which was drained) around edges of pan.

8Sprinkle salt and pepper on top.

9Simmer, covered, for
