- 2 1/2 c. self-rising flour
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 2 1/2 Tbsp. cinnamon
- 4 egg yolks
- 2 Tbsp. hot water
- 1 c. chopped pecans
- 4 egg whites
Directions

1Combine first 6 ingredients in order listed.

2Beat until smooth.

3Stir in pecans.

4Beat egg whites until stiff.

5Fold into batter.
-
6Pour mixture into an ungreased 10-inch tube pan.

7Bake at 325° for 1 hour.

8Invert pan and cool cake completely.

9Remove from pan.
-
10Sprinkle top of cake with powdered sugar.

11May use walnuts instead of pecans.
