  • 4 eggs
  • 1 c. sugar
  • 1 c. corn syrup (light)
  • 3 Tbsp. butter
  • 3 Tbsp. plain corn meal
  • 1 heaping c. pecans, chopped
  • dash of salt
  • 1 tsp. vanilla
  • 1 (9-inch) unbaked pie shell

    Beat eggs and sugar.

    Add butter, corn meal, salt, vanilla and corn syrup.

    Beat hard for about 3 minutes.

    Add pecans.

    Place in pie shell and bake at 375° for about 15 minutes, then reduce heat to low (about 300°) and bake about 45 minutes more.
