Pecan Raisin Cake

- 3 c. plain flour
- 3 tsp. baking powder
- 1 tsp. salt
- 3/4 c. raisins, cooked and chopped
- 3/4 c. shortening or butter
- 1 3/4 c. sugar
- 1/2 c. pecans, chopped
- 1 1/3 c. milk (if using butter or margarine) or 1 1/2 c. milk with 1 1/2 tsp. vanilla (if using shortening)
Directions

1Sift together flour, salt and baking powder.

2Cream shortening, add sugar and egg; one at a time; beat well after each.

3Stir in nuts and raisins; add flour mixture with milk.

4Beat until smooth. Add vanilla.

5Bake in two pans at 375° until done or for some 35 to 40 minutes.

6Frost with 7 Minute Icing.
