- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/4 cup vegetable oil
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- Topping
- 1/4 cup butter or 1/4 cup margarine, melted
- 1/4 cup packed brown sugar
- 1 cup chopped pecans
Directions

1In a large bowl, combine flour, baking powder, cinnamon and salt.

2In another bowl, beat the eggs, milk, oil, brown sugar and vanilla until smooth.

3Stir in dry ingredients just until moistened.

4Into each greased muffin cup, spoon 1 teaspoon butter, 1 teaspoon brown sugar and 1 heaping tablespoon of pecans.Top each with 1/4 cup batter.

5Bake at 350 degrees farenheit for 25-30 minutes or until muffins test done.

6Invert pan onto a piece of foil.

7Let stand for 2 minutes; remove pan.

8Serve warm.
