Ingredients

  • 1 lb. boiled penne
  • 2 Tbsp. olive oil
  • 4 skinless, boneless chicken breasts
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 tsp. garlic
  • 1 1/2 c. tomato sauce
  • 3 Tbsp. black olives
  • 1/2 c. hot chicken stock
  • 1 tsp. thyme
  • 1 tsp. rosemary
  • salt
  • pepper

Directions

    Boil the penne.

    Saute diced chicken breasts in olive oil. Add the peppers which have been thinly sliced and the garlic. Cook together until tender.

    Add the tomato sauce and black olives along with the chicken stock, thyme, rosemary, salt and pepper. Cook for a few minutes.

    Add the cooked pasta, stir and serve.
