- 2 onions, sliced
- 2 Tbsp. cayenne pepper
- 1 frying chicken, cut up
- 1/4 c. peanut oil
- 2 Tbsp. tomato paste
- 8 tomatoes, peeled or sliced
- 1/2 tsp. thyme
- 3 c. rice
Directions

1Season chicken with salt and pepper; fry in hot oil until golden brown.

2Drain.

3In a heavy frying pan, heat 1/4 cup peanut oil.

4Saute sliced onions until transparent.

5Add sliced tomatoes and saute, then add tomato paste, thyme and cayenne pepper.

6Mix well.

7Add chicken and simmer until chicken is tender.

8Serve over rice.
