Ingredients

  • 6 large red peppers
  • 6 large green peppers
  • 7 small onions
  • 1/3 head medium cabbage
  • 1/2 c. vinegar
  • 1 c. water
  • 1 c. vinegar
  • 1 1/2 c. sugar
  • 1 Tbsp. each: salt and whole mustard seed

Directions

    Chop or grind first 4 ingredients completely.

    Combine 1/2 cup vinegar and 1 cup water; bring to boil.

    Pour over drained vegetables; let stand for 10 minutes.

    Drain.

    Add 1 cup vinegar, 1 1/2 cups sugar, salt and whole mustard seed.

    Boil for 2 minutes.

    Pour over pepper hash and fill sterile jars.

    Process with hot water bath for 5 minutes.

    Makes approximately 3 pints.
