- 6 large red peppers
- 6 large green peppers
- 7 small onions
- 1/3 head medium cabbage
- 1/2 c. vinegar
- 1 c. water
- 1 c. vinegar
- 1 1/2 c. sugar
- 1 Tbsp. each: salt and whole mustard seed
Directions

1Chop or grind first 4 ingredients completely.

2Combine 1/2 cup vinegar and 1 cup water; bring to boil.

3Pour over drained vegetables; let stand for 10 minutes.

4Drain.

5Add 1 cup vinegar, 1 1/2 cups sugar, salt and whole mustard seed.

6Boil for 2 minutes.

7Pour over pepper hash and fill sterile jars.

8Process with hot water bath for 5 minutes.

9Makes approximately 3 pints.
