- 2 oz. pepper jack cheese
- 2 boneless, skinless chicken breasts
- 1 tsp. mexican or taco seasoning
- 1 Tbsp. vegetable oil
Directions

1Cut chicken into two 2 1/4 inch x 1 inch x 3/4 inch strips. Flatten chicken breast to 1/4 inch thickness.

2Place a strip of cheese down center of each breast.

3Fold chicken over cheese and secure with toothpicks.

4Rub mexican seasoning over chicken.

5In a large skillet, brown chicken in oil on both sides.

6Transfer to a greased 8 inch square baking dish.

7Bake uncovered at 350 degrees for 25 to 30 minutes or until chicken juices run clear.
