Ingredients

  • 1 c. pepper, chopped fine (3/4 sweet and 1/4 hot)
  • 6 1/2 c. white sugar
  • 1 1/2 c. apple cider vinegar
  • 1/2 tsp. salt

Directions

    Cook ingredients together for 1 minute.

    (Let come to a boil before timing.)

    Remove from burner.

    Strain to make clear jelly and allow to set 10 minutes (mash as you strain).

    Add 1 (6 ounce) bottle Certo and add red or green food coloring.

    Stir and pour up quickly before it gels.

    Seal in jars (you can use household wax on top after cools and then put lids on after wax sets).
