- 3 1/2 to 4 lb. rolled rump roast
- 2 cloves garlic
- 2 to 3 Tbsp. fresh cracked pepper
- olive oil to lightly coat roast
- 1 tsp. salt
Directions

1Slice garlic and tuck into several places on roast; sprinkle with salt.

2Rub oil on roast.

3Coat top of roast with cracked pepper.

4Place in pot and insert meat thermometer.

5Put roast in cold oven.

6Set temperature to 450° for a rare roast (120°).

7Check meat thermometer after 30 to 40 minutes; for medium roast (130°) check meat thermometer after 50 to 60 minutes.
