Ingredients
- 1 each: large sweet red, green and yellow pepper
- 2 c. firmly packed shredded green cabbage
- 1/2 c. cider vinegar
- 1/2 c. olive oil
- 2 Tbsp. sugar
- 1 Tbsp. Dijon mustard
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1/4 tsp. celery seed
Directions

1Quarter and seed peppers.

2Cut into very thin strips.

3In medium size bowl, combine peppers and cabbage.

4In jar with tight fitting lid, combine vinegar, oil, sugar, mustard, salt, pepper and celery seed.

5Shake vigorously to combine.

6Pour over peppers and cabbage mixture.

7Cover tightly and refrigerate at least 1 hour.

8Toss before serving.
