- 3 c. cooked rice
- 1 lb. lean beef
- 1 Tbsp. paprika
- 2 Tbsp. butter
- 2 cloves garlic
- 1 1/2 c. beef broth
- 1 c. sliced green onions (fresh)
- 2 green peppers, chopped
- 2 Tbsp. cornstarch
- 1/4 c. each: water and soy sauce
- 2 large tomatoes, quartered (optional)
Directions

1While rice is cooking, pound steak and cut into bite size pieces.

2Sprinkle meat with paprika; allow to stand while preparing other ingredients.

3Using a large skillet, brown meat in butter. Add garlic and broth.

4Cover; simmer for 30 minutes.

5Add water, if needed.

6Stir in onions and green peppers.

7Cover; cook 5 minutes more.

8Blend cornstarch, water and soy sauce; stir into meat mixture, stirring until clear and thickened (about 2 minutes).

9Add tomatoes and stir.

10Serve over rice.
