Ingredients

  • 1 cup cauliflower
  • 1 cup carrot
  • 1 cup broccoli
  • 12 cup mushroom
  • 12 cup bell pepper, sliced
  • 1 cup yellow squash
  • 1 cup zucchini
  • 12 cup tomatoes (optional)
  • 34 cup chicken broth or 34 cup vegetable broth
  • 12 teaspoon seasoned pepper
  • 12 teaspoon dried basil leaves
  • 1 teaspoon garlic, minced
  • 1 lemon, juice of
  • sesame seeds, toasted (optional)

Directions

    Cut veggies into 1 inch pieces.

    Combine all ingredients, except sesame seeds, in shallow baking dish.

    Cover and bake in 375F oven for 30-35 minutes, or until vegetables are tender.

    Stir vegetables halfway through cooking.

    Sprinkle with sesame seeds, if desired.
