Peppermint Parfaits – Two Ways

  • FOR THE PARFAITS:
  • 12 whole Round Peppermint Candies, Unwrapped And Crushed
  • 1-1/2 cup Water
  • 1 box (6 Oz Box) Of Raspberry Jello Mix
  • 1 cup Vodka (I Used Fluffed Marshmallow By Smirnoff) Or Water (for The Kids' Version)
  • 2 cups Whipped Topping (thawed)
  • FOR SERVING:
  • Additional Whipped Topping
  • Additional Crushed Peppermint Candies

Directions

    Set out 8 glasses (about 8-ounce size).

    In a small saucepan, add 1 1/2 cups of water and crushed peppermints. Bring to boil and stir until peppermints are melted. Add gelatin mix and stir until dissolved. Remove from heat. Stir in vodka or water.

    Pour a scant 1/3 cup (2.5 ounces) of the gelatin mixture into each glass. Place remaining mixture in a small bowl. Chill glasses and the small bowl of gelatin in the refrigerator until slightly thick. This will take about 1-1 1/2 hours.

    Mix remaining gelatin (in the small bowl) with two cups of whipped topping. Divide this evenly, putting a dollop on top of each of the 8 glasses. Chill until set, about 4 hours.

    Top each parfait with a dollop of whipped topping and some crushed candies and serve!
