- 4 boneless chicken breasts, halved
- 4 large slices pepperoni
- 4 slices Monterey Jack cheese
- 1 egg, beaten
- 3/4 c. dry bread crumbs
- 1/4 to 1/2 c. butter or margarine
Directions

1Pound chicken to 1/2-inch thickness.

2Place 1 slice of pepperoni and 1 slice of cheese on each breast.

3Roll up jelly roll style and fasten with toothpick.

4Dip each roll in egg, then bread crumbs.

5Melt butter over medium-low heat.

6Cook chicken 10 to 15 minutes, turning frequently.
