- 3 red, yellow or green peppers or 1 of each, cut in half lengthwise
- 1 (4.5 oz.) pkg. Spanish rice, cooked
- 1/4 lb. Velveeta Mexican pasteurized process cheese spread with jalapeno pepper, cubed
- 1/4 c. celery slices
- 1 Tbsp. chopped cilantro
Directions

1Remove seeds from peppers.

2Combine remaining ingredients; mix lightly.

3Fill each pepper with approximately 1/3 cup rice mixture; place in shallow baking dish.

4Cover.

5Bake at 350° for 30 to 35 minutes or until thoroughly heated.
