- 1 lb. perch, cut fillets in 2-inch pieces
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 c. chopped onion
- 1 c. chopped celery
- 3/4 c. chopped green pepper
- 3 1/2 c. beef broth
- 1 (8 oz.) can tomato sauce
- 1 tsp. pickling spice
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 3 c. hot, cooked rice
Directions

1In a skillet, saute onion, celery and green pepper.

2Add broth, tomato sauce, salt and pepper.

3Place pickling spice in a small piece of cheesecloth and tie closed.

4Add to sauce and simmer for 45 minutes.

5In a separate skillet, flour and brown fish.

6Remove the pickling spice; add the fish.

7Simmer for 10 minutes.

8Serve over rice.
