- 1/2 tsp. vanilla extract
- 1/4 tsp. cream of tartar
- 6 Tbsp. sugar

1In deep bowl, beat egg whites with vanilla and cream of tartar until soft peaks form.

2Do not overbeat egg whites before adding sugar or meringue will leak, making top of pie filling moist and slippery.

3Gradually add sugar, beating until stiff, glossy peak forms and sugar dissolves.

4Rub some meringue between your fingers; you shouldn't feel any sugar granules.

5Spread meringue over hot filling.

6To prevent meringue from shrinking while baking, seal to edges of pastry.

7Bake in a 350° oven for 12 to 15 minutes or until meringue is golden.
