- 3 eggs
- 1 c. oil
- 2 c. sugar
- 3 tsp. vanilla
- 3 c. sifted flour
- 1 tsp. salt
- 1 tsp. soda
- 3 tsp. cinnamon
- 1/4 tsp. baking powder
- 2 c. persimmon pulp
- 1 c. pecans
Directions

1Beat eggs, vanilla, sugar and oil together.

2Sift flour, salt, soda, cinnamon and baking powder; add to egg mixture.

3Beat well. Fold in persimmon and chopped nuts.

4Pour into greased and lightly floured pan.

5Bake at 350° for 1 hour or until toothpick comes out clean when tested.

6Let cool in pan for 10 minutes, then remove.
