Ingredients

  • 1 1/2 c. shortening
  • 2 c. sugar
  • 2 eggs, slightly beaten
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • pinch of salt
  • 1 Tbsp. vanilla
  • 1 c. persimmon pulp
  • 4 1/2 to 5 c. flour
  • 1 c. chopped pecans

Directions

    Wash and press fully ripe persimmons through colander.

    Cream shortening and sugar.

    Add eggs, vanilla and pulp.

    Add to flour, cinnamon, salt and soda.

    Mix well with other ingredients and add nuts.

    Drop from teaspoon onto oiled cookie sheet.

    Bake at 350° until lightly browned, about 10 minutes.

    These can be frozen.
