- 1 1/2 c. shortening
- 2 c. sugar
- 2 eggs, slightly beaten
- 1 tsp. cinnamon
- 1 tsp. soda
- pinch of salt
- 1 Tbsp. vanilla
- 1 c. persimmon pulp
- 4 1/2 to 5 c. flour
- 1 c. chopped pecans
Directions

1Wash and press fully ripe persimmons through colander.

2Cream shortening and sugar.

3Add eggs, vanilla and pulp.

4Add to flour, cinnamon, salt and soda.

5Mix well with other ingredients and add nuts.

6Drop from teaspoon onto oiled cookie sheet.

7Bake at 350° until lightly browned, about 10 minutes.

8These can be frozen.
