  • 1 c. persimmon pulp
  • 1 c. brown sugar
  • 2 Tbsp. oil
  • 1 egg
  • 2 1/4 c. flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/2 c. raisins
  • 1 c. nuts

    Mix first 4 ingredients well.

    Dust raisins and nuts with a little flour; add all dry ingredients, raisins and nuts to first mixture.

    Add vanilla.

    Bake in greased and floured 9 x 5-inch loaf pan at 350° for 45 minutes to 1 hour.
