- 4 whole eggs
- 2 c. sugar
- 1 c. shortening or half butter and half oil
- 2 c. flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. persimmon pulp
Directions

1Beat eggs and add sugar; beat until light and fluffy.

2Add oil and butter.

3Continue beating.

4Sift together and stir in dry ingredients.

5Beat well.

6Add persimmon pulp and mix well.

7Pour half into a greased and floured 9-inch tube pan.

8Mix 1 cup nuts (finely ground), 1 teaspoon cinnamon and 4 tablespoons brown sugar.

9Mix and sprinkle over the butter in the pan.

10Add remaining batter and bake at 300° for 60 minutes or bake in 9 x 13-inch pan for 30 minutes.
