  • 3 c. persimmon pulp
  • 1 1/4 c. sugar
  • 2 1/2 c. plain flour
  • 1/2 c. margarine or butter
  • 2 eggs
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1/4 tsp.salt
  • 1/2 c. buttermilk
  • 1 c. persimmon pulp
  • 1 c. sugar
  • 1 c. buttermilk
  • 1 c. plain flour
  • 2 eggs
  • 1/2 tsp. soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/8 tsp. salt
  • 1/2 tsp. vanilla
  • 1/2 to 1 stick butter

Directions

    Melt butter in a 9 x 13-inch baking dish or pan.

    Mix together all dry ingredients and add to persimmon pulp, buttermilk and eggs. Add butter.

    Add vanilla.

    Pour into baking dish.

    Bake at 350° for around 30 minutes or until done.
