Beef Avocado Enchiladas

- 1 tablespoon vegetable shortening (rounded)
- 1 tablespoon flour, all-purpose
- 2 tablespoons chili powder
- 2 cups water
- 1 x corn tortillas (6-inch) as needed
- 2 pounds ground beef, lean
- 1 small onions
- 1 large avocados ripe, diced
- 1 x mozzarella cheese or cheddar, monterey jack, shredded as desired
- 1 x salt to taste
Directions

1ENCHILADAS:

2To make sauce, melt shortening in skillet.

3Add flour; mix well.

4Stir in chili powder and water.

5Bring to boil, cooking and stirring until thickened.

6(Should be thick enough for dipping corn tortillas.)

7FILLING:

8Cook ground beef until brown.

9Add diced onion, avocado and salt; mix thoroughly.

10Dip corn tortillas in sauce.

11Fill with meat mixture and lots of cheese.

12Roll and serve piping hot.
